Koftas

 

Good to pair with a salad

Makes about 12 koftas.

Ingredients

  • 150g onion

  • 100g mushrooms 

  • 250g carrots 

  • 250g red capsicum 

  • 200g white cabbage 

  • 1-2 tablespoon olive oil 

  • 225g Fate all-purpose mix 

  • pepper to season 

  • 2 vegetable stock cubes 

  • 125g Fate breadcurmbs 

  • oil for frying 

  • 3 tablespoon curry powder

  • 3 teaspoon cumin

Instructions

Cut the vegetables into small, even sized pieces.
Place them onto a large baking tray enough to take them more or less in one layer.
Sprinkle with olive oil and toss the vegetables to lightly coat. Either place under a hot grill or into an oven at 220 degrees.
Add the spices.
Cook for 15-20 mins until they are cooked but not soft.
Leave to cool a little, then place the vegetables in a food processor.
Crumble in the vegetable stock cube, and blend to chop the vegetables in small pieces but not too fine. Add pepper to season.
Place the processed vegetables into a bowl and add the Fate mix. Stir the mixture together. The mixture will seem a little dry at first but as you continue it will become moist. Stop mixing as soon as it becomes sticky.
Sprinkle a good layer of breadcrumbs onto a shallow dish.
Place the vegetable mixture on top of the breadcrumbs.
Use your hands to gently shape them into a sausage shape. Then carefully thread a wooden skewer through the middle.
Put the koftas back into the crumbs to ensure they are coated.
The fingers can be shallow fried in oil until golden brown. Drain well and serve hot.
