Low Protein Lamingtons

 
 

An innovative LP lamington recipe

Makes 12 pieces = 0.3protein / per piece

Ingredients

FOR THE CAKE:

  • 1 x 250g Fate low protein cake mix

  • 65g Nuttelex

  • 125mls pure orange juice (make as per the Fate sponge recipe)

FOR THE ICING:

  • 45g desiccated coconut

  • 25g Vitarium sugar free chocolate drinking mix

  • 1/2 tablespoon Nuttelex

  • 1/4 cup boiling water

  • 225g icing sugar

Instructions

Preheat oven to 190°C.

Place cake mix in the bowl.

Add Nuttelex and orange juice.

Using a whisk, mix for 1 minute until well blended.

Place into a greased square cake tin.

Bake for about 15 minutes or until risen, golden brown and firm to the touch.

Turn out onto a wire rack to cool.

For the icing:

Sift icing sugar and Vitarium into a bowl.

Add Nuttelex and water.

Stir until smooth.

Cut the cake when cool into 12 pieces.

Place coconut in a dish.

Using a fork, dip a piece of cake in icing mix. Shake off excess.

Toss in coconut.

Place on a wire rack over a baking tray.

Repeat with remaining cake.

Stand for 2 hours or until set.
