Shitake Mushroom Dumplings

 

Ingredients

For the dumplings

  • 3 ½ cups platypus bread mix

  • 1 cup tepid water (may need more)

For the filling

  • 3 tablespoons canola oil

  • 1 tablespoon ginger, minced

  • 1 clove garlic, chopped fine

  • 1 large onion, chopped fine

  • 2 cups shitake mushrooms, finely chopped

  • 1 ½ cups cabbage (Chinese or savoy), finely chopped

  • 1 ½ cups carrot, finely shredded

  • ½ teaspoon pepper

  • 2 teaspoons sesame oil

  • 3 tablespoons Shao Xing wine (can omit if desire)

  • 2 tablespoons soy sauce (15ml = 1.5p but double check the brand you use)

  • 1 teaspoon sugar

Note: could also add coriander, chives, sweet potato)

Method

Put flour in mixing bowl, slowly add water and knead to a smooth dough.

Cover with a damp cloth (to minimise drying out) and put aside for an hour.

Make the filling by adding 2 tablespoons of oil in a wok (or frying pan) over medium-high heat.

Add ginger and cook for about 30 seconds. 

Then add the onions and garlic and fry until translucent.

Add the mushrooms, cook for about 3-5 minutes until the mushrooms are tender.

Add the cabbage and carrots, cook for another 3-5 minutes until they are tender and the liquid has been cooked off.

Transfer mixture to a bowl to allow to cool.

Once the mixture has cooled, add the pepper, sesame oil, soy sauce, sugar, Shao Xing and stir through.

Roll the dough out and divide into quarters. Take one quarter and put the remainder back in the bowl under the cloth so it won’t dry out.

Roll tablespoon size balls. Use a rolling pin to roll out into a circle. Roll out to create a thin circle.

Prepare a small bowl of water nearby.

Put a teaspoon of mixture in the middle of the circle. Dip fingers into the water and moisten the edges of the circle half way around. Fold the dumplings over and press to seal.

Dumplings can be steamed, fry or boiled.

Makes about 40-50 dumplings depending on the size
